What is Special About Heat-Treated Flour?
Heat-treated flour is made by a process of heating and cooling the flour to improve its baking performance. The heat treatment helps to denature the proteins in the flour, which makes them more resistant to microbial contamination. It also helps to improve the flour’s absorption properties, so that it can better absorb water and fat. Heat-treated flour is often used in bread making, as it can help to produce a more consistent product. It can also be used in cakes and pastries, where it can help to create a lighter, fluffier texture. Heat-treated flour is generally more expensive than untreated flour, but it is worth the extra cost for its superior baking performance and making it safe to use in edible cookie dough!
